Anthony's Organic Red Cocoa Powder has a dark and rich red color with a high fat content of 10-12%. This percentage refers to the amount of cocoa butter left in the powder during processing. Compared to our regular cocoa powder, our Red Cocoa is Dutch processed (alkalized), resulting in a smooth, deep chocolatey flavor with less acidity. Due to its less acidity, Dutched Cocoa is usually used along with baking powder, while natural cocoa calls for baking soda in recipes.
