Ingredients
- 2 cups sweet potato (boiled, peeled and mashed) - 3 cups Anthony’s Goods Organic Cassava Flour - 2 tsp salt - 1 cup water - your favorite pesto
Instructions
This simple but comforting dish is made with just a few simple ingredients that come together to make a chewy, perfectly pillowy gnocchi. 1. Boil your sweet potatoes until fork tender. Set them aside to cool, then peel and mash them. Measure out 2 cups. 2. In a large bowl, mix together the cassava flour, salt and mashed sweet potatoes. Add the water and knead everything together. 3. Roll the dough into ropes and cut them into small pieces. Place the pieces onto a baking sheet lined with parchment paper. Leave some space in between them to prevent them from sticking to each other. 4. Bring a pot of water to a boil and add the gnocchi in batches. When they float, use a slotted spoon to remove them to the pot. 5. Immediately toss the cooked gnocchi in the pesto to prevent sticking. Enjoy!
