Ingredients
• 2 (15 ounce) cans chickpeas, drained and rinsed • 1 yellow onion, chopped • 2 large cloves garlic, minced • ¼ cup olive oil, plus more for the pan • ¼ cup kalamata olives, pitted and chopped • ¼ cup sundried tomatoes • ¼ cup capers, drained • 1 lemon, sliced thinly • ¼ cup feta cheese • 4 sprigs fresh thyme • 1 tsp Anthony’s Ground Cumin Seed Powder • Salt and freshly cracked Anthony’s Goods Organic Peppercorn, to taste • Sliced baguette, for serving
Instructions
These salty, spiced chickpeas bring layers of Mediterranean flavors to the table. Enjoy them on crusty bread as an appetizer or fill up a bowl for a hearty meal. 1. Preheat the oven to 375F. 2. Drizzle some olive oil in a pan and sauté the onions and garlic until soft and fragrant. 3. Transfer the onion mixture to a pan and add the chickpeas and remaining ingredients. Mix well to combine. 4. Bake for 35 to 40 minutes, until the chickpeas are soft and lightly browned. 5. Enjoy on sliced baguette!
