Ingredients
Ingredients for the tofu: -14.5 oz extra firm tofu -1 tbsp olive oil -1 tbsp Anthony’s Goods Organic Tapioca Flour -1/2 tsp salt -1/2 tsp ground black pepper Ingredients for the sauce: -1/2 cup low sodium soy sauce -3 tsp black pepper (freshly ground) -1/3 cup brown sugar -2 tsp honey -1/4 cup rice vinegar -1 tbsp Anthony’s Goods Organic Tapioca Flour Ingredients for the vegetables: -2 tbsp olive oil -1 yellow onion, sliced -3 cloves garlic, minced -1 tbsp ginger paste -1 red bell pepper, sliced -1/2 yellow bell pepper, sliced -1 zucchini, sliced -More salt, to taste
Instructions
1. Squeeze as much water out of the tofu as possible, then tear it into bite-sized pieces. Toss these pieces with the other tofu ingredients and bake at 400F for 25-30 mins. 2. Meanwhile, whisk the sauce ingredients together in a medium bowl and set aside. 3. Heat the olive oil in a large pan and sauté the vegetables until tender. Then, add in the baked tofu and the sauce. (Whisk the sauce again right before adding it to the pan.) Mix to combine and cook for a few more minutes until the sauce thickens. 4. Serve the black pepper tofu over Anthony’s Goods farro or rice.
