Belgian Pearl Sugar is made by compressing beet sugar crystals to form larger pieces that do not easily melt in recipes. These chunks of sugar are the key ingredient in traditional Belgian Liège waffles. Not only do they add a crunchy pop of sweetness, but they caramelize when baked or cooked.
