Instructions
These rice paper bundles are filled with a hearty tofu-vegetable mix that’s so good, it can be enjoyed on its own. But take it from us–it tastes amazing wrapped in rice paper and dipped in this spicy sauce.1. Make the filling: in a large pan, heat up the olive oil and sauté the garlic for 30 seconds before adding the ginger root powder, grated ginger, chopped cabbage and grated carrot. Stir and cook for a few minutes, then add the crumbled tofu, chopped mushrooms, soy sauce and sesame oil. Cook until everything is soft and all liquid has cooked off. Taste and add salt, if needed.
2. Using a slotted spoon to ensure no liquid is transferred, place some filling in the center of the rice paper and fold it into a square. Set aside and repeat until the filling has run out.
3. In a small bowl, whisk together the dipping sauce ingredients.
4. Serve the wraps with the dipping sauce, garnished with more green onions and black sesame seeds.
