Ingredients
• 2 cups Anthony’s Goods Split Red Lentils, soaked in 2 cups water overnight • 2 cups water (additional) • ¾ tsp salt
Instructions
Make your own lentil-based tofu at home! It’s easy, healthy and versatile. This recipe makes soft tofu, which works great in scrambles. 1. Soak the lentils in water and set in the fridge overnight. 2. The next day, drain the excess water and add the soaked lentils to a high-speed blender. Add 2 cups of water and the salt. Blend until smooth. 3. Line a 8x8 baking pan with parchment paper. 4. Working in batches, pour this mixture into a large pan through a mesh sieve to filter out any residue. Cooking it on low heat and whisking constantly, cook the mixture for a few minutes until it thickens to a paste-like consistency. Pour this mixture into the baking pan and smooth the top. 5. Place the pan into the fridge and let it set for at least 4 hours. 6. When the tofu has set, remove it from the pan by lifting the parchment paper and slice it into cubes. Use it as you would use soy tofu.
