Rainbow Chickpea Flour Fritters
• ½ cup Anthony’s Goods Chickpea Flour • ¼ cup Anthony’s Goods Oat Flour • 3 tbsp Anthony’s Goods Flaxseed Meal • 1 tsp salt • Water, to combine • 1 ½ cups shredded red cabbage • 1 cup shredded carrots • 3 green onions, sliced • 1 cup corn, drained • 2 tbsp basil, chopped • Guacamole, for serving • Olive oil, for greasing the pan
Bright, colorful, flavorful. These gluten-free veggie fritters are made of chickpea flour, oat flour, flaxseed meal and an array of vegetables, pan-fried to perfection. 1. In a large bowl, whisk together the chickpea flour, oat flour, flaxseed meal and salt. 2. Add little splashes of water and continue to whisk until you get a batter texture. 3. Mix in the vegetables. 4. Heat a non-stick pan and grease it with some olive oil. Pan fry the fritters, ⅓ cup at a time. (Pack the fritters into patties and press them down while cooking for best results.) 5. Cook each side until golden brown. 6. Serve with guacamole.
