Ingredients
• 3 very ripe bananas, plus 1 more for topping • 3 eggs • ¼ cup avocado oil • ¼ cup honey • 2 tsp vanilla extract • 1 ¾ cup Anthony’s Goods Oat Flour • 1 ½ tsp Anthony’s Goods Cassia Cinnamon Powder • ¼ tsp Anthony’s Goods Cloves (ground) • A few shakes ground nutmeg • 2 tsp baking powder • ½ tsp salt • ½ cup Anthony’s Goods Walnut Halves and Pieces (crushed), plus more for topping
Instructions
This moist, gluten-free banana bread is slightly sweetened with honey and features crunchy pieces of walnuts. Prefer a sweeter snack? Simply drizzle your slice with more honey and enjoy! 1. Grease a 9x5 inch loaf pan with oil and preheat the oven to 350F. 2. In a large bowl, mash the 3 bananas until smooth. 3. Add in the eggs, avocado oil, honey and vanilla extract and whisk until incorporated. 4. Then, add in the dry ingredients and mix one last time, folding in the walnuts at the end. 5. Pour the batter into the loaf pan, and top with slices of the last banana and more crushed walnuts. 6. Bake for 50 mins to an hour, until a toothpick inserted into the center comes out mostly clean. 7. Let cool a little before removing from the pan and slicing.
