Mushroom, Sesame and Scallion Noodles
• 14 oz cooked wheat noodles • 10 oz sliced mushrooms • 1 tbsp avocado oil • ½ cup sliced scallions, divided • ¼ cup reduced sodium soy sauce • 1 tbsp ginger paste • 2 tbsp sesame oil • 2 tbsp rice vinegar • 1 tsp Anthony’s Goods Coconut Sugar • 1 tsp salt, or more to taste • Anthony’s Goods Black Sesame Seeds, for topping
Healthy whole wheat noodles, mushrooms and scallions are tied together with a mouth-watering sesame sauce for a meal that comes together in mere minutes. 1. Cook your noodles according to package instructions. 2. In a medium pan, heat the avocado oil and sauté the mushrooms and ¼ cup of the sliced scallions. 3. Meanwhile, mix the soy sauce, ginger paste, sesame oil, rice vinegar, coconut sugar and salt together in a small bowl. 4. Pour the sauce into the pan and add the noodles. Mix well to combine. 5. Simmer for a few minutes, then remove from the heat. 6. Serve with fresh sliced scallions and black sesame seeds on top.
