Mascarpone Stuffed Apricots

Ingredients
• 20 Anthony’s Goods Dried Apricots (pick the fattest ones) • 1 cup mascarpone • Juice of ½ lemon • ¼ cup Anthony’s Goods Cane Sugar • 1 tbsp orange blossom water • ⅓ cup raw unsalted pistachios, chopped
Instructions
Dried apricots are stuffed with creamy mascarpone and drizzled with orange blossom syrup to make this sweet Turkish-inspired dessert. 1. Soak the apricots in cold water overnight. 2. Remove the apricots from the soaking liquid (do not throw the liquid away) and add them to a medium pot. Pour in one cup of the soaking liquid. (If there is not enough, add more water to make a cup.) Add the sugar, lemon juice and orange blossom water and bring to a boil. Reduce to a simmer and cook the apricots for 10 minutes until soft but not mushy. 3. Remove the apricots from the pot with a slotted spoon and bring the remaining liquid to a boil until reduced to a syrup. 4. Cut the apricots gently in half (most of them will split on their own) and fill them with mascarpone. Drizzle them with the syrup and sprinkle with chopped pistachio. 5. Serve!
