Lemony Green Beans with Seared Sumac Tofu

Ingredients
Ingredients for the green beans: • 2 tbsp olive oil • ½ yellow onion • 2 cloves garlic, minced • 16 oz bag green beans, cut into 3 inch pieces • 2 tbsp Anthony’s Goods Ground Sumac • Zest of 1 lemon • Salt, to taste Ingredients for the tofu: • 16 oz block firm tofu • 2 tbsp Anthony’s Goods Ground Sumac • 3 tbsp low-sodium soy sauce • 3 cloves garlic, minced • 1 tbsp maple syrup or honey • 3 tbsp ginger paste • Salt, to taste
Instructions
This vegan meal is healthy, filling and loaded with plant-based protein from chickpeas and quinoa. 1. To prepare the green beans, heat olive oil in a large pot. Sauté the onions until soft and translucent, then add the minced garlic and cook for another minute. Add the green beans and cook until bright green and tender. Season with sumac and salt. Remove from the heat and top with lemon zest after plating. 2. To prepare the tofu: Press the tofu for at least an hour, then cut it into 8 pieces. Combine the sumac, soy sauce, minced garlic, maple syrup, ginger paste and salt in a sealable container. Marinate the tofu in the sauce for 30 minutes, then pan cook until seared on the outside. 3. Top the green beans with the tofu and serve.
