Ingredients

Ingredients for the salad:
	•	⅓ cup Anthony’s Goods White Quinoa
	•	⅓ cup water 
	•	4 handfuls chopped kale
	•	5 mini peppers, chopped
	•	3 Persian cucumbers, chopped
	•	¾ cup cherry tomatoes, chopped
	•	4 spring onions, chopped 
	•	1 tbsp Aleppo pepper (optional)

Ingredients for the dressing:
	•	1 small avocado
	•	1 ½ tbsp tahini
	•	2 tbsp water
	•	2 tbsp lemon juice
	•	1 tbsp olive oil 
	•	1 garlic clove 
	•	Salt and pepper to taste

Instructions

Here’s another healthy salad for your repertoire: one with a creamy avocado tahini dressing you'll want to pour over everything. 

1. In a small pot, combine the quinoa and water and bring to a boil. Reduce to a simmer and cook, stirring occasionally, until the water is absorbed and the quinoa is soft. Set aside to cool. 

2. Meanwhile, chop all of your salad ingredients and add them to a large bowl. 

3. In a high speed blender or food processor, combine all of the dressing ingredients and blend until creamy and smooth.

4. Add the quinoa to the salad bowl and drizzle everything with the dressing. Toss it all together and enjoy.
