Instructions
Garlic mashed potatoes with a twist! These sweet and savory garlic mashed sweet potatoes are vegan but still “cheesy” thanks to nutritional yeast. Top with crunchy hazelnuts and ground dried rosemary for a crunchy, aromatic finish.1. Preheat the oven to 425F and line a baking sheet with parchment paper.
2. Poke holes in the sweet potatoes with a fork. Place them and the garlic cloves in the baking tray and drizzle with a little olive oil. Sprinkle with fresh rosemary, salt and pepper and bake for 40-50 minutes, until the sweet potatoes are fork tender.
3. Remove the sweet potatoes from the oven and let them cool a little before peeling. Add them to a large bowl with the roasted garlic cloves and mash everything with a fork. Mix in the almond milk and nutritional yeast. Season with more salt and pepper, to taste.
4. Top with crushed roasted hazelnuts and ground dried rosemary before serving.
