Ingredients

1 ½ cups Anthony’s Goods Dried Chickpeas, soaked for 24 hours

1 tsp baking soda

1 orange bell pepper, chopped

2 carrots, grated

2 ripe avocados, mashed

½ red onion, chopped

¼ cup golden raisins

Juice of 2 limes

1 tsp Anthony’s Goods Ground Ginger Root

1 tsp Anthony’s Goods Organic Turmeric Powder

1 tsp curry

1 tsp salt, or more, to taste

2 heads lettuce, for serving
Instructions
Indian spices bring color, flavor and dimension to this creamy vegan chickpea salad, wrapped in leaves of lettuce.1. To prepare the chickpeas: Soak the chickpeas for 24 hours and drain them before adding them to a medium pot with plenty of water and the baking soda. Bring to a boil then reduce to a simmer and cook until the chickpeas are tender (about 30-35 mins). Drain any excess water and let cool until safe to handle.
2. Add the chickpeas to a large bowl and mash them, leaving some larger pieces for texture.
3. Mix in the remaining ingredients and stir well to combine.
4. Enjoy wrapped in lettuce for a healthy meal.
