Black Bean, Quinoa and Walnut Patties

Ingredients
• 1 cup Anthony’s Goods Walnuts • ½ cup Anthony’s Goods Rolled Oats • ¼ cup Anthony’s Goods White Quinoa • 1 15-oz can black beans, divided • 1 tbsp Anthony’s Goods Non-Fortified Nutritional Yeast • 1 tsp pepper or tomato paste • 1 tbsp low sodium soy sauce • 1 tsp Anthony’s Goods Cumin Seed Powder • ½ tsp smoked paprika • ½ tsp garlic powder • A few shakes cayenne pepper • 1 tsp salt • Freshly ground pepper, to taste • Avocado oil, for pan frying • Guacamole, lettuce, hot sauce and slider buns, for serving
Instructions
Walnuts add crunch and flavor to these vegan burger patties made with black beans, rolled oats and quinoa. We recommend slathering them in guacamole instead of ketchup or mustard, but you do you! 1. In a small pot, add the quinoa and ½ cup water. Cook until all of the water has been absorbed, then remove from the heat and set aside. 2. In a large pan, toast the walnuts until brown and fragrant, then add them to the bowl of a food processor. 3. Drain and rinse the can of black beans, then pat them dry with a paper towel. Add half of them to the food processor and set the other half aside. 4. Add the oats, soy sauce, tomato/pepper paste, cumin, paprika, cayenne, salt and pepper to the food processor and process just until the mixture comes together. Do not over-process–you don’t want it to get mushy. 5. Pour the mixture into a large bowl and stir in the rest of the black beans and the quinoa. 6. Use a ¼ cup measure to scoop out the mixture and shape it into patties for sliders. Use a ⅓ cup measure if shaping them into burger patties. 7. Grease a large pan with avocado oil, and cook each side of the patties until browned. 8. Serve on buns with lettuce, guacamole and hot sauce. Dig in!
