Za'atar Orzo Salad
Ingredients for the salad: • 8 oz orzo • 3 Persian cucumbers, chopped • 1 cup cherry tomatoes, sliced in half • 6 oz feta cheese, crumbled • ⅓ cup Kalamata olives, sliced in half • 1 15 oz can artichoke hearts, drained and sliced in half • ½ yellow onion, chopped • Several sprigs fresh mint, chopped • 3 tbsp Anthony’s Goods Za’atar Ingredients for the dressing: • ¼ cup freshly squeezed lemon juice • ¼ cup olive oil • 1 tsp salt • 1 clove garlic, minced • Freshly ground black pepper, to taste
Jordanian za’atar brings a unique flavor to this refreshing orzo salad tossed with classic mediterranean ingredients. 1. Cook the orzo according to package instructions. Drain it and add it to a large bowl. 2. Add the remaining salad ingredients to the bowl. 3. In a small bowl, whisk together the ingredients for the dressing. 4. Toss the orzo salad with the dressing. For best results, toss an hour or two before serving, so the orzo cools and soaks up the flavors of the dressing.
