Brazilian Tapioca
These gluten free treats are cooked without oil and can be enjoyed with sweet or savory fillings.

Ingredients

450g Anthony’s Organic Tapioca Flour

4 cups water

Pinch of salt

Your preferred fillings: we used peanut butter and banana with shredded coconut and honey drizzled on top

Instructions:
- Add the tapioca flour and salt to a bowl. Whisk to combine.
- Pour in the water and let the batter hydrate for at least one hour.
- Dab the top of the batter with paper towels until all excess water is removed.
- Then, crumble the batter as finely as possible.
- Preheat a nonstick pan over medium heat. Spread some of the crumbled batter evenly into
the pan.
- Cook until the crumbs stick together and the bottom of the tapioca gets a bit golden. Flip to cook the other side.
- Add your favorite fillings and enjoy!
