1¾ cups Anthony’s Organic Whole Grain Oat Flour

1/4 cup Anthony’s Organic Tapioca Flour

2 tbsp Anthony’s Organic Cane Sugar

3 tsp baking powder

1/2 tsp salt

1¾ plant milk

2 eggs

1/3 cup avocado oil

1 tsp vanilla extract

Raspberry jam or compote, for serving

Melted dark chocolate, for decorating

Instructions:
- Whisk the dry ingredients (oat flour, tapioca starch, cane sugar, baking powder and salt) together in a large bowl.
- In a separate medium bowl, whisk together the wet ingredients (milk, eggs, oil and vanilla extract).
- Pour the wet mixture into the dry mixture and mix until just combined. Let the batter rest for 15 minutes.
- Heat your heart-shaped waffle iron, then cook the waffles one batch at a time. Pour in the batter and insert a popsicle stick before cooking until golden.
- Drizzle the waffles with melted chocolate and sprinkle them with shredded coconut. Serve them with fresh raspberries and a raspberry jam or compote. Drizzle on some maple syrup for extra sweetness.
