Ingredients

2 cups Anthony’s Organic Rolled Oats

1/2 cup Anthony’s Organic Whole Grain Oat Flour

2 tbsp Anthony’s Organic Brown Flaxseed Meal

3/4 cup whole raw almonds

3/4 cup Anthony’s Organic Whole Cashews

2 tsp Anthony’s Organic Ceylon Cinnamon Powder

1/2 tsp salt

1/4 cup coconut oil, melted

1/3 maple syrup

1 tsp vanilla extract

3/4 cup Medjool dates, chopped (add after baking the granola)

Instructions:
- In a large bowl, whisk all of the dry ingredients together.
- In a medium microwave-safe bowl, melt the coconut oil and whisk in the maple syrup and vanilla extract.
- Pour the wet mixture into the dry mixture and mix well until everything is coated.
- Press the granola evenly onto a baking tray lined with parchment paper and bake at 300F for 40 minutes (mixing once halfway through the baking time).
- Once the granola is golden, remove it from the oven and mix in the chopped dates.
- Enjoy it layered into a yogurt parfait, with milk or on its own!
