Ingredients

2 cups Anthony's Organic Dried Chickpeas (cooked)

1 red onion, sliced

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 zucchini, sliced

1 pack gnocchi (500g)

Drizzle of olive oil

Salt and pepper, to taste

1/3 cup tahini
-
1/3 cup water
-
Juice of 1 lemon

1 tsp salt

1 large clove garlic, minced

1-2 tbsp harissa


Instructions:
- Preheat the oven to 425F and line a large baking sheet with parchment paper.
- Chop the vegetables and toss them and the gnocchi with olive oil, salt and pepper on the baking sheet. Place the baking sheet in the oven and roast for 30 minutes.
- While the gnocchi and vegetables cook, prepare the sauce by mixing the tahini with water until smooth. Then, mix in the lemon, garlic, salt, and harissa. Whisk again until smooth.
- When the sheet pan meal is cooked, drizzle it with the tahini sauce and enjoy.
