Ingredients

  • 1/2 cup all-purpose flour

  • 1/2 cup whole wheat flour

  • 1/3 cup Anthony’s Blanched Almond Flour

  • 2 tbsp Anthony’s Organic Gelatinized Maca Root Powder

  • 1 tbsp Anthony’s Cane Sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 ½ cups plant milk

  • 1 tbsp Anthony’s Organic Psyllium Husk Powder mixed with 3 tbsp water (or 1 egg)

  • 1 tbsp maple syrup, plus more for topping

  • 1 ½ tsp vanilla extract

  • 1/2 cup chopped pecans, plus more for topping

  • Maple syrup, for drizzling

Instructions:

  1. In a large bowl, whisk all of the dry ingredients together, except the chopped pecans.
  2. Add in the wet ingredients and mix well to combine.
  3. Fold in the chopped pecans.
  4. Heat a pan or griddle and cook the pancakes until golden on both sides.
  5. Enjoy topped with more chopped pecans and a generous drizzle of maple syrup.
