These fajitas are made with seitan, a white meat substitute made with vital wheat gluten that stands in for chicken.
1. Add all of the seitan ingredients, except the vegetable broth, into a food processor. Remove the doughy mixture and knead it a few times. Divide into two equal parts and stretch each piece, twisting as you pull. Tie each into a knot and add it to a pot of vegetable broth.
2. Bring the broth to a simmer and cook the seitan for 25 minutes.
3. Remove the seitan from the pot and let it cool before shredding into pieces. Set aside.
4. In a large pan, heat the olive oil and sauté the onions and sliced peppers. Once they are soft, add the seitan and the spices. Mix to combine. Let the mixture simmer together for 5 minutes before removing the heat.
