Ingredients
Ingredients for the seitan: • ½ cup canned chickpeas, drained and rinsed • 1 cup Anthony’s Goods Vital Wheat Gluten • ⅔ cup Anthony’s Goods Chickpea Flour • 1 cup minus 1 tbsp water • 1 tsp salt • 1 tsp garlic powder • 1 tsp onion powder • 32 oz low sodium vegetable broth Ingredients for the fajitas: • 2 tbsp olive oil • 3 bell peppers, sliced • ½ yellow onion, sliced • 4 tsp chili powder • 2 tsp Anthony’s Goods Cumin • 1 tsp smoked paprika • 1 tsp paprika • 1 tsp garlic powder • 1 tsp onion powder • 1 tsp salt • Cayenne pepper, to taste Ingredients for serving: • Beans • Avocado or guacamole • Rice • Tortillas
Instructions
These fajitas are made with seitan, a white meat substitute made with vital wheat gluten that stands in for chicken. 1. Add all of the seitan ingredients, except the vegetable broth, into a food processor. Remove the doughy mixture and knead it a few times. Divide into two equal parts and stretch each piece, twisting as you pull. Tie each into a knot and add it to a pot of vegetable broth. 2. Bring the broth to a simmer and cook the seitan for 25 minutes. 3. Remove the seitan from the pot and let it cool before shredding into pieces. Set aside. 4. In a large pan, heat the olive oil and sauté the onions and sliced peppers. Once they are soft, add the seitan and the spices. Mix to combine. Let the mixture simmer together for 5 minutes before removing the heat.
