Lemon Lentil Vegetable Soup
• 1 yellow onion, chopped • 3 cloves garlic, pressed • 1 tbsp olive oil • 1 tsp Anthony’s Goods Cumin Seed Powder • ½ tsp Anthony’s Goods Turmeric Root Powder • 7 carrots, sliced • 10 oz bag baby kale • 1 lemon, sliced • 1 lemon, juiced • 2 cups green lentils • 4 cups low sodium vegetable broth • 4 cups water • Salt, to taste • Anthony’s Good Tellicherry Pepper, freshly ground
This healthy lemony lentil soup flavored with cumin and turmeric can be enjoyed hot or cold. 1. In a large pot, sauté the onions and garlic in the olive oil until the onions are translucent. Add the cumin, turmeric, sliced carrots and cook for 5 more minutes. 2. Add the sliced lemon, lemon juice, green lentils, vegetable broth and water. Stir to combine and let simmer for 15-20 more minutes until the lentils are tender. Add salt and freshly ground pepper, to taste. 3. Add the kale towards the end of the cooking time and stir to cook it down. 4. Serve warm.
