Applesauce and sliced apples give this cake a moist texture. Enjoy a slice with a cup of tea or coffee for a gluten free breakfast.
1. Preheat the oven to 350F and line a loaf pan with parchment paper.
2. In a large bowl, whisk together the applesauce, eggs, honey and almond extract. Then, mix in the almond flour, flaxseed meal, baking soda, baking powder, salt and cinnamon.
3. Fold in the chopped apples (and walnuts, if desired), then pour the batter into the lined loaf pan.
4. Bake for 40 minutes.
5. Let cool for 15 minutes before removing from the pan to slice and enjoy.
