Ingredients
• ¼ cup Anthony’s Goods Raw Cashews • ¼ cup Anthony’s Goods Raw Hazelnuts • 2 tbsp Anthony’s Goods Walnut Halves and Pieces • 2 tbsp Anthony’s Goods White Unhulled Sesame Seeds • ½ tbsp coconut oil • 2 cups pitted dates, chopped into small pieces • 2 tbsp Anthony’s Goods Shredded Coconut • ½ tsp Anthony’s Goods Ceylon Cinnamon Powder
Instructions
This healthy dessert is sweet, crunchy and made with loads of heart-healthy nuts and seeds. 1. Heat a large pan on medium-high heat and toast the cashews, hazelnuts and walnuts until fragrant. Toss often to prevent burning. Add the sesame seeds toward the end and toast for an additional minute. Pour the nuts and seeds into a bowl to cool and set aside. 2. Coat the same pan with coconut oil and add in the chopped dates. Cook on low heat for a few minutes until the dates are soft and warm. Pour in the shredded coconut, cinnamon and toasted nuts, and mix well to combine. Remove from the heat and let the mixture cool enough to handle. 3. Mix everything together with your hands and use parchment paper to shape the mixture into a log. Place the log in the refrigerator for at least 1 hour to harden. 4. Slice into rounds and serve.
