Chewy Mochi Brownies with Chocolate Chips

Ingredients
• 1 cup Anthony’s Goods Sweet Rice Flour • ½ cup Anthony’s Goods Cocoa Powder • ½ cup Anthony’s Goods Cane Sugar • 1 tsp baking powder • ¼ cup semi-sweet chocolate chips • ¼ tsp salt • 2 eggs • 1 cup almond milk • 2 tbsp avocado oil, plus more for brushing • 1 tsp vanilla extract
Instructions
Sweet rice flour is the main ingredient in mochi, which explains why these brownies are so much chewier than the average. Dotted with melted chocolate chips, these sweet squares are impossible to resist. 1. Preheat the oven to 350F and brush a 9 inch round quick release pan with avocado oil. 2. In a medium bowl, whisk together the sweet rice flour and cocoa powder. Add the sugar, baking powder and salt. Mix again. 3. In another medium bowl, beat the eggs with an electric mixer, just until smooth. Add in the almond milk, vanilla extract and avocado oil. Mix until foamy. 4. Combine the wet and dry ingredients and mix until combined. Fold in the chocolate chips. 5. Pour the batter into your pan and smooth the top of the mixture with a rubber spatula. Bake for 35-40 minutes until a toothpick inserted into the center comes out mostly clean. 6. Let the brownies cool before removing them from the pan and slicing.
