This creamy pea soup is rich in flavor and completely dairy free! Made with a soaked cashew base and sautéed fragrant vegetables, it’s both vegan and indulgent.
1. Heat the olive oil in a large pot and saute the onions, garlic and sliced celery until soft and translucent (about 12 mins).
2. Add the water, soaked cashews, green peas and 1 tsp salt, let simmer for an additional 10 mins.
3. Working in batches, pour the mixture into a high-speed blender and blend until smooth. Taste and adjust salt to your liking. You can also add more water if you’d like the soup to be thinner.
4. Garnish with fresh mint, sliced green onions, and more green peas before serving.
