Ingredients

  • 3 frozen bananas (frozen overnight)

  • 3 frozen peaches (frozen overnight)

  • 1 tsp Anthony’s Goods Xanthan Gum

  • ¼ cup toasted pecans, plus more for topping

  • ¼ cup + 1 tbsp chopped basil

  • 1 tsp vanilla extract

  • Maple syrup, to taste (optional)

Instructions

If peach season has you buying crates of the fruit, freeze a few and whip up this healthy soft serve-style nice cream, made extra smooth and creamy courtesy of xanthan gum.

1. Add all of the ingredients to a high-speed blender and blend until smooth. You may need to stop and scrape down the sides a few times.

2. Serve in bowls, topped with more chopped toasted pecans and a peach slice.
