• 1 yellow onion, chopped • 2 tbsp olive oil • 3 cloves garlic, minced • 1 cup carrots, chopped • 1 cup celery, chopped • 3 cups broccoli florets • 6 cups low sodium vegetable broth • 2 cups split peas • 4 handfuls spinach • 1 tsp Anthony’s Goods Dried Basil • 1 tsp dried oregano • ½ tsp Anthony’s Goods Dried Thyme • Salt, to taste • Freshly ground black pepper, to taste

Filled with vegetables, leafy spinach, dried herbs and split peas, this recipe is an easy way to sneak fiber, vitamins and tons of goodness into your day. 1. In a large pot, add the onions and the olive oil. Sauté the onions until soft and translucent. Add the garlic and cook for another minute. 2. Add the carrots, celery, broccoli, vegetable broth and split peas. 3. Add the salt, pepper, dried basil, thyme and oregano. Let simmer for at least an hour, until the split peas and vegetables are tender. 4. Stir in the spinach and let it cook down shortly before removing the soup from the heat.
