Ingredients

  • Ingredients for the vegan “cheese”:

  • 1 cup Anthony’s Goods Raw Cashews, soaked overnight (or at least 3 hours)

  • ½ cup Anthony’s Goods Non-Fortified Nutritional Yeast

  • 2 tbsp pepper paste (or tomato paste)

  • 2 mini yellow peppers, tops and seeds removed

  • 1 tsp smoked paprika

  • ½ tsp cayenne pepper

  • 3 tbsp lime juice

  • 1 large clove garlic, minced

  • 1 cup water

  • 1 tsp salt

  • Ingredients for fully-loaded nachos:

  • Tortilla chips

  • Black beans

  • Corn

  • Guacamole

  • Mini peppers

  • Red onions

  • Cilantro

  • Tomatoes

Instructions

Smoky, salty, spicy. This vegan nacho “cheese” is so good, you won’t believe that it’s made from cashews and completely dairy-free. You’ll just want to pour it all over everything, all of the time. Use it as a dip for veggies, burritos, wraps, and of course dolloped over chips for mouth-watering nachos.

1. Add all of the “cheese” ingredients to a food processor and blend until smooth.

2. Pour it over the tortilla chips and add your favorite toppings!
