Ingredients
• 1 tbsp olive oil • ½ yellow onion, sliced • 1 ½ cups sliced bell peppers • 14 oz extra firm tofu, pressed and then grated or shredded • 2 tsp Anthony’s Goods Cumin Seed Powder • 3 tsp chili powder • 1 ½ tsp smoked paprika • 1 tsp paprika • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp salt • 1 cup Anthony’s Goods Farro Grain • 2 cups water • Salt, to taste • Sliced avocado, for serving
Instructions
This fajita bowl is non-traditional–with farro stepping in for rice and tofu for meat. The spices, however, are classic Mexican fajita seasonings. This easy vegan recipe is definitely worth a try. 1. Press the tofu for 20 minutes to get rid of any excess liquid. 2. In a large pan, heat up the olive oil and sauté the onions and bell peppers until the onions are soft and translucent. 3. Add the tofu and spices. Mix and let cook for 10 minutes. 4. Meanwhile, add the farro and water to a medium pot. Bring to a boil, then reduce to a simmer. Cook until all of the water has been absorbed (about 15 minutes). Season with salt, to taste. 5. Assemble your bowl: Add some farro to a bowl with the tofu fajita on the side. Top with avocado slices and enjoy!
