Ingredients

  • 1 cup Anthony's Brown Teff Flour

  • 1/2 cup Anthony's Organic Cocoa Powder

  • 1/4 cup Anthony's Organic Brown Flaxseed Meal

  • 1/2 cup warm water

  • 1/2 cup Anthony's Organic Coconut Sugar

  • 1/2 cup Anthony's Organic Cane Sugar

  • 1/4 cup avocado oil

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 1/2 cup chopped walnuts, plus more for topping

  1. Preheat the oven to 350F and oil a muffin tin with avocado oil.
  2. In a large bowl, whisk together the teff flour and cocoa powder.
  3. In a medium bowl, whisk together the flaxseed meal and water, until a gel-like mixture forms. Then, add the coconut sugar, cane sugar, avocado oil, vanilla extract and salt. Mix well to combine.
  4. Add the wet ingredients to the dry ingredients and mix again. The texture of the batter will be thick. Fold in the walnuts.
  5. Scoop the batter into the muffin tin and sprinkle more chopped walnuts on top.
  6. Bake for 20-25 minutes, until a toothpick inserted into the center of a few brownies comes out clean.
