Ingredients
• ½ cup Anthony’s Goods White Quinoa • 1 cup water • 1 lb strawberries, trimmed and sliced • 2 cucumbers, sliced • 2 avocados, sliced • ¼ red onion, chopped • 1 head lettuce, chopped • Handful basil, chopped • Handful parsley, chopped • ¼ cup Anthony’s Goods Sunflower Seeds • ¼ cup feta cheese • For the dressing: ¼ cup olive oil, 3 tbsp lemon juice, salt and pepper to taste
Instructions
This salad has got it all: grains, seeds, fruits, herbs, cheese and leafy greens. It’s a feast for the eyes and the perfect addition to a big lunch with family or friends. 1. Combine the quinoa and water in a small saucepan and bring to a boil. Simmer until the water is absorbed, about 15 minutes. 2. Place the quinoa in a container in the fridge to cool. 3. In the meantime, chop the strawberries, cucumbers, onion, avocados, lettuce, basil and parsley. Add them to a large bowl and top with feta cheese and sunflower seeds. Add the cooled quinoa and toss with the olive oil and lemon juice dressing.
