This salad has got it all: grains, seeds, fruits, herbs, cheese and leafy greens. It’s a feast for the eyes and the perfect addition to a big lunch with family or friends.
1. Combine the quinoa and water in a small saucepan and bring to a boil. Simmer until the water is absorbed, about 15 minutes.
2. Place the quinoa in a container in the fridge to cool.
3. In the meantime, chop the strawberries, cucumbers, onion, avocados, lettuce, basil and parsley. Add them to a large bowl and top with feta cheese and sunflower seeds. Add the cooled quinoa and toss with the olive oil and lemon juice dressing.
