Ingredients

  • For the muffins:

  • * 1 ¼ cups all-purpose flour

  • * 3/4 cup Anthony's Goods Cane Sugar

  • * 1/2 cup Anthony's Goods Cocoa Powder

  • * 2 tsp baking powder

  • * 1 tsp Anthony's Goods Espresso Baking Powder

  • * 1/2 tsp salt

  • * 1 cup soy milk

  • * 1/2 cup avocado oil

  • * 1 tbsp apple cider vinegar

  • * 1/2 cup chocolate chips

  • For decorating:

  • * 1 cup chocolate chips, melted

  • * 1/2 cup white chocolate chips, melted

Instructions

These triple-chocolate spiderweb muffins are perfect for spooky season. Give them a try!

1. Preheat your oven to 400F and line your muffin pan with muffin liners.


2. In a large bowl whisk together the dry ingredients— the flour, sugar, cocoa powder, baking powder, espresso baking powder and salt.


3. Then add in the wet ingredients—the soy milk, avocado oil and apple cider vinegar. Stir until combined and fold in the chocolate chips.


4. Pour the batter into the lined muffin tin and bake for 20-25 minutes. Insert a toothpick into the center to check for doneness.

5. Let the muffins cool in the pan.

6. When the muffins have cooled, melt the dark chocolate in a medium bowl and the white chocolate in a small bowl. Let the white chocolate cool slightly, then pour it into a piping bag fitted with a small piping tip.

7. Dunk each muffin top into the dark chocolate, then pipe 3-4 concentric circles with the white chocolate. Use a toothpick (drag from the center to the edges) to create a spider web effect.

8. Let the chocolate set and enjoy!
