Smashed Lemony Peas on Toast

Ingredients

  • 2 cups frozen peas

  • 1 tbsp tahini

  • 1 tbsp Anthony’s Goods Non-Fortified Nutritional Yeast

  • ¼ tsp Anthony’s Goods Organic Dried Thyme Leaves

  • ¼ cup fresh parsley, chopped

  • 2 tbsp lemon juice

  • Zest of ½ a lemon

  • Salt, to taste

  • Sliced spring onions, for topping

  • Anthony’s Goods Sunflower Seeds and Unhulled White Sesame Seeds, for topping

  • Slices of toast

Instructions

Here’s a zesty alternative to avocado toast that tastes (and looks) like spring.

1. Thaw the frozen peas in the microwave and add them to the bowl of a food processor.

2. Add the remaining ingredients, except the spring onions, sunflower seeds and sesame seeds.

3. Process until the peas are mashed and everything is well combined.

4. Toast your bread and spread the pea mixture on top. Sprinkle with the spring onions, sesame seeds and sunflower seeds.
