No-Bake Pumpkin Pie Bites

Ingredients for the pumpkin pie bites:
	•	1 cup Anthony’s Goods Oat Flour
	•	¼ cup ground pecans
	•	⅓ cup pumpkin puree
	•	1 1/2 - 2 tsp pumpkin spice (see below)
	•	2 tbsp maple syrup
	•	1 tbsp Anthony’s Goods Coconut Sugar (optional, if you prefer a sweeter dessert)
	•	Chocolate chips, to top

Ingredients for the pumpkin spice mix:
	•	1 tbsp Anthony’s Goods Cassia Cinnamon
	•	1 tsp Anthony’s Goods Ground Ginger
	•	1 tsp Anthony’s Goods Cloves (ground)
	•	1 tsp ground nutmeg
	•	A few shakes of allspice


These soft, chewy treats are melt-in-your-mouth delicious–and undeniably adorable too! Perfect for pumpkin pie enthusiasts of all ages. 

1. In a small bowl, whisk together the ingredients for the pumpkin spice mix. Set aside.

2. In a medium bowl, whisk together the dry ingredients for the pumpkin pie bites. 

3. Add the maple syrup and mix until a dough forms.

4. Scooping 1 tbsp at a time, roll the dough into a ball in the palms of your hands. 

5. Use a toothpick to score the top of each ball to look like a pumpkin.

6. Place a chocolate chip at the top center of each to mimic a stem. 

7. Enjoy!
