Ingredients

  • ½ cup Anthony’s Goods Sweet Rice Flour

  • ¼ cup Anthony’s Goods Coconut Milk Powder

  • ½ cup warm water

  • Anthony’s Goods Shredded Coconut, for coating

  • 1 ripe mango, chopped into chunks

Instructions

Chewy mochi and sweet ripe mango come together in this coconut-coated dessert.

1. In a medium microwave-safe bowl, whisk the coconut milk powder and warm water until smooth, then whisk in the sweet rice flour.

2. Microwave for 30-second intervals, stirring in between, three times.

3. Let the mochi cool while you cut the mango into chunks.

4. Coat the mango with the mochi and then coat with the shredded coconut.

5. Place in the fridge for an hour to set before enjoying.
