Ingredients

  • 1 ½ cups Anthony’s Goods Organic Dried Mango Strips

  • ⅓ cups Anthony’s Goods Cashews

  • 1 cup Anthony’s Goods Almond Natural Unblanched Almond Meal/Flour

  • ½ cup Anthony’s Goods Shredded Coconut, plus more for coating

  • ½ tsp turmeric

  • Zest of 1 lime

  • Honey or maple syrup, to taste

Instructions

Soak the cashews in hot water and the dried mangoes in room temperature water for 30 minutes. Throw all the ingredients (except the honey or maple syrup) in a food processor and blend until a doughy mixture forms that holds when pressed together. Sample it and see if it needs sweetening. If so, add honey or maple syrup to taste. Blend again to incorporate the sweetener. Roll into balls and coat with shredded coconut. Store leftovers in the fridge.
