Ingredients
Ingredients for the salad: • ½ cup green lentils • 1 cup water • 1 cup cherry tomatoes, sliced in half • ⅓ cup green olives, sliced • ¼ cup feta cheese • ¼ cup fresh mint, chopped • Handful fresh parsley, chopped • 7 oz butter lettuce, chopped • 5 radishes, sliced Ingredients for the dressing: • ¼ cup olive oil • ¼ cup lemon juice • 1 tsp Dijon mustard • 1 garlic clove, minced • 1 tsp Anthony’s Goods Jordanian Za’atar • ¼ tsp Anthony’s Goods Ground Cumin Seed Powder • 1 tsp salt • Freshly ground black pepper
Instructions
Za’atar, briny olives and tangy feta shine in this crunchy and colorful green lentil salad. 1. Add the lentils and water to a small saucepan and cook until tender. Remove from the heat and set aside to cool. 2. Add the cooled lentils and remaining salad ingredients to a bowl. 3. In a small bowl, whisk together the dressing ingredients. 4. Toss the salad and enjoy!
