Ingredients for the salad: • I head green cabbage, chopped into small pieces • 3 persian cucumbers, chopped into small pieces • 4 spring onions, chopped thinly • Anthony’s Goods Pumpkin seeds, for topping Ingredients for the dressing: • 1 ½ cups spinach • 1 cup fresh basil • Flesh of 1 avocado • 1 shallot • ⅓ cup Anthony’s Goods Nutritional Yeast • 2 garlic cloves • Juice of two limes • ½ cup walnuts • 2 tbsp olive oil • 2 tbsp rice vinegar • 1 tsp salt

Chop the ingredients for the salad and add them to a large bowl. 2. Add the ingredients for the dressing into the bowl of a food processor and process until smooth. 3. Toss the salad with the dressing and serve, topped with pumpkin seeds.
