Ingredients
• 1 ripe banana • 1 cup + 2 tbsp almond milk • 1 tsp vanilla extract • 2 tbsp dark chocolate, melted • 1 cup Anthony’s Goods Blanched Almond Flour • ¾ cup Anthony’s Goods Buckwheat Flour • ¼ cup Anthony’s Goods Organic Culinary Grade Cocoa Powder • 2 tbsp Anthony’s Goods Coconut Sugar • 2 tsp baking powder • ½ tsp salt • 1 ½ tbsp coconut oil, melted • ⅓ cup mini chocolate chips • Anthony’s Goods Shredded Coconut, for topping • Mini chocolate chips, melted dark chocolate and fresh berries, for topping
Instructions
Triple chocolate waffles, anyone? These gluten free waffles are perfect for breakfast, brunch or dessert. 1. In a large bowl, mash the ripe banana. Add the almond milk, vanilla extract, coconut oil and melted dark chocolate. Whisk until combined. 2. In a medium bowl, whisk together the almond flour, buckwheat flour, cocoa powder, coconut sugar, baking powder and salt. Add the dry ingredients into the bowl of wet ingredients and mix until smooth. Fold in the mini chocolate chips. 3. Let the batter sit for 15 minutes. When the time is almost up, heat up your waffle iron. 4. Cook the batter, ¼ cup at a time, until crisp. 5. Serve topped with shredded coconut, mini chocolate chips, melted dark chocolate and fresh berries.
