Ingredients

  • 4 eggs

  • ½ cup Anthony’s Organic Cane Sugar

  • ½ tsp almond extract

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 ½ cups Anthony’s Blanched Almond Flour

  • Vegetable oil or butter to grease the baking pan

  • Sliced almonds, for topping

  • Powdered sugar, for serving (optional)

  1. Preheat oven to 350°F and grease an 8-inch round cake pan or 8x8 baking pan.
  2. Beat the eggs with the sugar until smooth and foamy.
  3. Add the almond extract and mix to combine.
  4. Then, add the baking powder, salt, and almond flour. Fold in the dry ingredients.
  5. Pour the batter into the prepared pan and top it with sliced almonds.
  6. Bake at 350°F for 25–30 minutes, until golden brown.
  7. Let cool for 15 minutes before removing the cake from the pan. Sprinkle with powdered sugar and enjoy.
