Gingerbread Men

Ingredients

3 T Anthony’s Goods Coconut Oil
3 T pure maple syrup
2 T Anthony’s Goods Coconut Sugar
2 egg yolks
1 tsp vanilla extract
1/4 tsp Anthony’s Goods cloves, ground
1/4 tsp ground nutmeg
¾ tsp ground all spice
1 ½ tsp Anthony’s Goods Ginger
2 tsp Anthony’s Goods Ceylon Cinnamon
1 ½ cup Anthony’s Goods Almond Flour
¾ cup Anthony’s Goods Arrowroot Flour
Frosting of choice

Instructions

Add the coconut oil, maple syrup, and coconut sugar to a mixing bowl and beat with a hand mixer until combined.
Next, add the egg yolks and vanilla and beat until light and fluffy.
Add the cloves, nutmeg, ginger, cinnamon, almond flour, and arrowroot flour to the wet ingredients and stir until incorporated.
Place the dough in the refrigerator for 10-20 minutes. Meanwhile, heat the oven to 350 degrees.
Remove the dough from the refrigerator and use a rolling pin to roll the dough out to desired thickness.
Use gingerbread men cutters to cut the cookie dough. Place the cookies on a cookie sheet.
Once the cookie sheet is full, place the sheet into the oven. Allow the cookies to bake for 10-12 minutes.
Remove the cookies from the oven and allow them to cool for 5 minutes before removing them to a cooling rack.
Repeat the process until all of the cookies are baked.
Add the frosting to a piping bag.
Once the cookies are cool, pipe the frosting onto the cookie to outline the gingerbread men.
