Ingredients for the farro salad:

2 cup Anthony’s Goods Organic Farro Grain

6 cups water

1 tsp salt

3 cucumbers, chopped

½ yellow onion, chopped

1 can chickpeas, drained and rinsed

½ cup walnuts, chopped

Large handful parsley, chopped

1 large carrot, shredded

Ingredients for the tahini dressing:

½ cup tahini
-
½ cup water

1 large clove garlic, minced
-
2 ½ tbsp lemon juice

Salt to taste

Instructions
This farro salad is creamy, crunchy and very nutritious. Whip up this large batch and savor each garlic-infused bite.1. In a pot, add the farro, water, salt and bring to a boil. Reduce to a simmer and cook until tender, 15-20 mins.
2. Drain the excess water completely and set the farro aside to cool.
3. Cut all of the herbs and vegetables and place them in a large bowl.
4. Then, prepare the tahini sauce by first whisking the tahini with the water until smooth, then adding the remaining ingredients and whisking again.
5. Add the farro to the rest of the salad ingredients and toss. Then add the dressing and toss again.
