Ingredients
1 lb lean ground beef 1 green pepper, chopped 1/2 red onion, chopped 2-3 T Anthony's Goods Cumin 1 T chili powder 1 tsp garlic powder 1 tsp onion powder Pink Himalayan salt to taste 2 sweet potato, washed & dried A couple handfuls of sugar snap peas A handful of mushrooms, sliced 1 can of chickpeas, rinsed & drained 1 lime Cilantro (optional) 4 T Anthony’s Goods Un-hulled Sesame Seeds
Instructions
Preheat oven to 400 degrees. Wash the sweet potatoes & cut 3 cent slices in the top of each sweet potato. Wrap each tater in foil & place on a baking sheet. Cook the potatoes for about 1 1/2 hours or until tender. Meanwhile, add the ground beef to a skillet with the chopped bell pepper and onion. Add the seasonings and cook until the meat is cooked through. After the sweet potatoes are done cooking, remove them from the oven and slice in half. Add the un-hulled sesame seeds to a small pan and toast them over medium heat (be sure to continuously stir them and check them as they will burn fast). Start adding all of your ingredients to a bowl. Add the chickpeas, taco meat, mushrooms, peas, and sweet potato. Top everything with the toasted sesame seeds, lime, and cilantro. Serve & enjoy!
