Preheat the oven to 350 degrees and grease an 8X8 inch pan. Add oil, brown sugar, and white sugar to a mixing bowl and beat together until combined. Next, add the eggs and vanilla to the wet ingredients and stir to incorporate. Add the salt, baking powder, beet juice powder, cocoa powder, and flour to the wet ingredients and beat together until mixed through. Using a spatula, scrap the brownie batter into the greased pan in an even layer. Place the dish into the oven and allow the brownies to bake for 25-30 minutes. Remove the brownies from the oven to cool. Meanwhile, place the cream cheese, vanilla, beet juice powder, and powdered sugar into a bowl and beat together until combined and smooth. Once the brownies are cooled, frost them with the beet frosting. Serve & enjoy!
