Instructions
A cozy bowl of gingerbread-spiced oats is the perfect breakfast during the chilly winter months. Double or triple this recipe (scale up every ingredient except the baking powder) if you have lots of ripe bananas on hand and want to meal prep for the week.1. In a medium bowl, mash the bananas then add the rolled oats, almond milk, chia seeds, vanilla extract, baking powder, spices and salt. Mix everything together and let sit for 10 minutes while you preheat the oven to 400F.
2. Pour the mixture into 2 small (6 oz) ramekins and bake for 25-30 minutes.
3. Serve warm.
