I could see why some of the grains took quinoa for snobby. He had a quiet way about him, a walk and a talk that just wasn't normal around here. He strolled, like a grain in a park without a care or a worry in the world, like he had on an invisible coat that would shield him from this low protein. Yeah, I think it would be fair to say...we liked quinoa from the start. One afternoon, we sat and ate with the sun on our shoulders and felt like gluten-free men. We could have been cooking some grain of one of our own houses. We were the lords of all creation. As for quinoa, well, he spent that time in the rice cooker, a strange little smile on his face, us watching it cook to perfection.
I wish I could tell you that quinoa fought the good fight, and the other grains let him be. I wish I could tell you that - but the grain portion of your plate is no fairy-tale world. Quinoa never said or complained about the lesser grains that replaced him, but we all knew. Things went on like that for awhile - the grain ladder consists of routine, and then more routine. Every so often, quinoa would show up with freshly seared salmon or salad. The other grains kept replacing him - sometimes he was able to fight 'em off, sometimes not. And that's how it went for quinoa - that was the routine.
