Cream of Tartar has an acidic quality similar to lemon or vinegar, making it a great household cleaning agent. In foods, it acts as a stabilizing agent keeping the proteins in egg whites from sticking together. This allows for a smoother and stiffer consistency when whipping up a light and fluffy meringue or a soft, airy angel food cake!
Cream of Tartar is also used to reduce the discoloration of boiled vegetables, prevent sugar syrups from crystallizing and more!
